my father used to make a dish he called cracker enchiladas. It's very simple.
this is basically a layered casserole dish that you bake in the oven.
1. place a layer of whole saltine crackers in the bottom of a baking pan (or casserole dish)...size depends on how many hungry people you have.
2. next layer is a ground beef mixture. Start by sauteing 1/4 cup of chopped onion in a frying pan. Add 1 pound of ground round to the skillit and brown. Drain off the grease and then add 1 small can tomato paste and 2 cans tomato sauce and 1 can of diced tomatoes. May need some water and ketchup....it's your call. doesn't need to be too thick... a little soupy is best (it will thicken up in the oven later) Add salt and pepper to taste. slowly bring to a boil and let simmer for at least 10 minutes. Add this mixture on top of the crackers in the baking pan.
3. next add a layer of shedded cheeze....I prefer sharp...or even Velvetta.
4. Next add another layer of whole saltine crackers...like putting a puzzle together.
5. next create a one cup mixture of tomato sauce, ketchup, hot sauce, salt and pepper. spread this sauce over the top layer of crackers.
6. finish with another layer of shredded cheeze.
7. bake in the oven at 400 degrees until the cheeze on top begins to brown. May need to turn on the broiler for a minute or two.
you can add different spices like mexican taco sauce to the mix but for me I like it just about as plain as it gets. It's very filling. When I was 10, my mother said I ate the equivilant of about two pounds of hamburger meat at one sitting of this Cracker Enchilladas. Tommy
