I've been recording a show called America Now, which comes on several times a day. It usually takes me about five minutes to watch a half-hour segment, but once in a while they have some really good stuff. One is coconut oil.
It's fairly cheap, and is used for everything from medium heat cooking to spreading on bread like butter. The stuff is delicious, and contains the kind of fat that's good for you. I've tried it on toast, and scrambled eggs in it this morning, and am sold on it. You're not supposed to deep fry with it, or anything with very high heat.
They showed a recipe for fake fudge with a fraction of the calories and none of the bad stuff. I made it, and will make lots more in the future. It takes equal portions of honey, coconut oil and uinsweetened cocoa. I swear it tastes better than regular fudge. Coconut oil is solid until it reaches 76 degrees, so all you have to do to make this fudge set up is keep it in the refrigerator. It literally melts in your mouth. I melted the oil & honey together in the microwave, then mixed in the cocoa and poured it into miniature cupcake papers. After about a half hour in the frig, it's ready to eat.
