This is the recipe for the Taco Bean Soup from the Irish Deli in Birmingham, AL. The Irish Deli was a neat place and a great watering hole. Sadly the Irish Deli is no more, but I have shared this recipe on several cooking forums I belong to and now this soup is a hit around the country. They keep referring to it as Ken's Taco Soup but I remind them it is not mine but something I ripped off. Like most recipes, we tweak them. The only things we change on this recipe is to substitute original formula Rotel for the diced tomatoes and sometimes substitute beer for the water.
This is good stuff. This is the large recipe they cooked for the lunch crowd so unless you have a big dutch oven or stock pot, you may need to size accordingly. I normally make it half size.
Like most good soups and stews it is even better warmed up the next day and it freezes well.
Irish Deli's Taco-Bean Soup
3 pounds hamburger meat
2 green bell peppers, diced
1 large yellow onion, diced
3 packets taco seasoning (McCormick's)
2 small cans (15.5-16 oz) black beans
2 small cans kidney beans
2 small cans pinto beans
2 small cans red beans
2 16 oz cans tomato sauce
2 16 oz cans whole yellow kernel corn
2 14.5 cans diced tomatoes
2 tablespoons pepper
1 tablespoon salt
2 cups water
Saute onions and bell peppers in virgin olive oil.
Add onions and bell peppers to hamburger meat as it browns.
Stir in taco seasoning.
Stir in cans of beans. (note - do not drain the canned beans, use the liquid)
Add tomato sauce, corn, diced tomatoes, salt, pepper and water.
Simmer about 2 hours.
