We like to make chili from scratch and are still toying with recipes to hopefully compete in cook offs someday, but for a quick meal at home this is hard to beat.
Ken's Quick And Easy Chili
4 slices bacon
2 pounds lean ground beef
1 can Rotel diced tomatoes with green chili's
1 12 oz can beer
1 pack Carroll Shelby's 2 Alarm Chili mix
1 8 oz can tomato sauce
1 clove garlic crushed and diced
1 medium green pepper diced
1 large onion diced
Cook bacon in a skillet until crisp, remove bacon and sit aside.
Brown beef in the bacon grease.
Remove the beef to a colander to drain and cook the onion and green pepper until onion turns translucent.
Put beef, onion, pepper and crumbled bacon into a dutch oven, add Rotel, tomato sauce, garlic and beer. Add the chili spice from the Shelby pack and stir. Add salt and black pepper to taste. Add Red Chili powder from Shelby pack to taste, a little goes a long way so be careful. Just the Rotel may be enough spice for some folks.
Simmer on low heat for for as long as you can stand it, the longer and slower the better, but for quick and easy you can get by with about 45 minutes. If chili is too watery, add some of the Masa Harina powder from the Shelby pack to thicken.
Optional: 1-16 ounce can of beans, your choice of black, dark red or chili beans. Add them the last 5 minutes of cooking time. Purists will tell you that if chili has beans or tomatoes in it, it isn't real chili but I figure whatever tastes good is OK. Some of the things I sometimes add are a teaspoon or so of diced jalapenos or a couple shakes of red chili flakes (the things you shake on a pizza).
Top with chopped green onions and shredded cheese and serve with some corn chips and your beverage of choice, I prefer a cold Corona but cold milk works too.
If you have more time, replace the ground beef with round steak or other lean cut of meat diced into 1/2 cubes and brown the cubes like you do the ground beef. The cooking time will inrease, you will want to cook till the cubes are crumbling. It isn't "quick" but it is worth the wait.
